What do you think is the most popular Japanese-style dish? Sushi, of course! JapaneseSushi is extremely popular now in Europe. You can find a sushi restaurant very easily whenever you go to a big city.
Paris is no exception. "SUSHI" signs have sprung up all around town. In particular you can find many sushi restaurants near the Opera Theater.
You may think that making sushi is difficult, but you can make it simply at home. Usually, in making Japanese sushi, the most important thing is to use fresh fish. But today let's make Japanese traditional Sushi,Oshi-zushi --pressed sushi with smoked salmon, which is easy to find in supermarkets everywhere.

SALMON SUSHI - Recipe

[SUSHI RICE]

♦ INGREDIENTS
c = cup
T = tablespoon
t = teaspoon
3 c rice (cooked)
1piece sea tangle(kelp) (7- x10-cm piece)

Vinegar Mix
3-1/2 T rice vinegar
2-2/3 T sugar
1-2/3 t salt

♦ How to make SUSHI RICE
1. Wash the rice, rinse it in a colander immediately, and drain thewater. Put the rice into a rice cooker and add water (about 600 cc) according to the scale on the cooker. Wipe the surface of the sea tangle with a dishcloth, place it in the cooker on top of the rice, and cook the rice in the usual way. After steaming the rice for about 10 minutes, remove the sea tangle and stir in some of the vinegar mix.
2. Wipe a wooden sushi bowl with a damp cloth and put the boiled rice right in the middle of the bowl. Start with half the quantity of rice, stirring in more vinegar mix with a flat wooden spoon. Move the spoon in one direction while turning the bowl in the other direction. Stir gently, being careful not to crush the grains of rice.
3. Add the remaining rice and repeat, adding the rest of the vinegar mix and making sure that it is thoroughly mixed into the boiled rice. Set the bowl aside and cover it with a damp cloth.

[SALMON SUSHI (Oshi-zushi)]  Pressed sushi with smoked salmon

♦ INGREDIENTS
Sushi rice (see above)
Smoked salmon (1 package, 4 big slices)

♦ How to make SALMON SUSHI
1. Prepare a wooden sushi mold (available at Japanese grocery stores) by dampening it with cold water before use. (Or substitute a plastic container and cover the bottom with plastic wrap.)
2. Place the smoked salmon in the bottom of the mold. Cut the big slices of salmon to fit the shape of the bottom of the mold, and pack them tightly side by side.
3. Add the cooled sushi rice, pressing it firmly over the smoked salmon. Put two thirds of the rice into the wooden mold. (Plastic container: fill it to the brim.)
4. Press down on the rice firmly with the mold's wooden lid. (Plastic container: compact the sushi rice by rolling a rolling pin over the surface.)
5. Push the wooden lid from the top so that the sushi comes out of the bottom (plastic container: turn it upside-down) onto a cutting board. Cut the shape into small sizes for easy handling. Serve immediately.
