    Meeting Myself as a Child . . .

    Recently, I've had "wave motion" on my mind.
    According to the Meikyô Dictionary of Japanese, the term "wave motion" is "the phenomenon of movements which are produced at a point in space and successively transmitted into the surrounding environment. These may include water waves occurring on the water's surface, seismic waves, and electromagnetic waves." Until recently, I had absolutely no awareness of the concept of "wave motion."
    But once I became aware of this, there were numerous situations where I would think, "that's wave motion . . . " Just when I'm thinking, "I have to get in touch with so-and-so," that person contacts me, or I meet the same person every time I go to the sports club even though I go at different times. Surprisingly, there are lots of times when it's hard to come up with any other explanation but "wave motion."

    Tofu-Chicken Burgers Tofu-Chicken Burgers

    Tofu is high in protein, calcium, vitamins and minerals, while low in saturated fat, sodium and calories. It has a variety of potential health benefits, such as lowering the risk of heart diseases, osteoporosis, breast cancer and prostate cancer. With all these health benefits, it's no wonder that tofu has gained wide acceptance around the world.

    Yet, some people still have some reservations about tofu. They think it's too mushy, too bland, or too boring. For those who are interested in the benefits of tofu, yet are not too crazy about its taste or texture, this recipe offers a good way to incorporate it into their diet.

    Add steamed baby carrots, asparagus, and rice for a healthy, nutritious and satisfying supper.

    INGREDIENTS
    (4 servings)

    C  =  cup
    T  =  tablespoon
    t   =  teaspoon
    lb  =  pound (= 450 grams)
    oz  =  ounce (= 28 grams)
    pkg =  package

    burgers:
    1 pkg (12-oz)      water-packed extra-firm tofu, drained
    1/2 lb    ground chicken breast
    1/2 c     onion, finely chopped
    1/4 t      salt
    1/4 t      pepper
    1/8 t      nutmeg
    1 1/2 T    canola oil, divided

    sauce:
    1/2 C     water
    3 T      tomato ketchup
    2 T      Worcestershire sauce
    1/2 T    butter
    1 T      low-sodium soy sauce

    How to make Tofu-Chicken Burgers

    1) Place tofu on several layers of paper towels; cover with additional paper towels. Place a plate on top; let stand 1 hour. Place in a bowl; crumble with a fork. Set aside.

    2) Heat 1/2 tablespoon oil in a large non-stick skillet over medium heat. Add onion; saute 5 minutes or until tender. Remove from pan. Set aside.

    3) Combine ground chicken, salt, pepper, and nutmeg in a large bowl. Stir in tofu and onion; mix well.

    4) Divide tofu mixture into 4 equal portions; shape each into a 1/2-inch-thick patty.

    5) Heat 1 tablespoon oil in a pan over medium-high heat. Add patties; cook until lightly browned, about 3 minutes. Carefully turn patties over and cook 3 minutes or until browned.

    6) Add 1/3 cup of hot water to pan; bring to a boil. Cover; cook over medium heat until almost all the liquid is gone. Remove patties from pan. Keep warm.

    7) Add sauce mixture to pan; simmer and reduce sauce over medium heat until thickened. Return patties to pan. Cook until thoroughly heated. Spoon sauce over each patty, and serve.
